Chocolate Chip Oatmeal Cookies
Ingredients: 2 ripe bananas, 1 ½ cups of oats, ⅓ cup of mini chocolate chips
Preheat the oven to 350° Fahrenheit.
Place some parchment paper onto a 9×13 inch metal baking pan and spray with cooking spray.
In a bowl, mash both bananas until they are fully broken down.
Add 1 ½ cups of oats and stir it with the banana mixture until a thick cookie batter forms.
Add ⅓ cup of mini chocolate chips to the batter and mix.
Form the batter into approximately 12 small disks.
Place each disk onto the parchment paper.
Bake for 15 minutes until the cookies are lightly golden.
Sweet Potato Pancakes
Ingredients: 2 small sweet potatoes, two eggs, 1 teaspoon cinnamon
Boil 2 small sweet potatoes for twenty minutes or until soft.
Peel the skin off the potatoes and mash them in a bowl.
Add the eggs and cinnamon and mix the batter until it forms a thick paste.
Turn the stove heat on to medium-low and lightly oil the cooking pan.
Dollop a large spoon of the batter onto the pan and cook each side for about 5 minutes.
Flourless Chocolate Mug Cake
Ingredients: 1 egg, 1 ripe banana, 2 tablespoons unsweetened cocoa powder.
In a mug, mash a banana until all the lumps are gone.
Add the egg to the mashed banana and mix until it’s evenly combined.
Add the unsweetened cocoa powder to the banana-egg mixture and stir until the powder dissolves.
Microwave the batter for 1 minute and 30 seconds.
Chocolate Hazelnut Balls
Ingredients: ¾ cup pitted and soaked dates, 2 tablespoons unsweetened cocoa powder, ½ cup toasted, peeled hazelnuts
In a food processor add the dates, unsweetened cocoa powder, and toasted, peeled hazelnuts.
Blend the ingredients in the food processor until a thick, sticky dough forms.
Roll the dough into small balls.
Roll the balls in cocoa powder and place on a plate.
Refrigerate for 2 hours.
