Banana Ice Cream
Yields 2 servings
Ingredients: Bananas, vanilla extract, milk (optional)
You will need: Food processor or blender, container
Cut two ripe bananas into small pieces and freeze overnight in a container
Place the frozen bananas into a food processor or a high-quality blender
Add a teaspoon of vanilla extract
Blend until a soft-serve consistency forms
Tips: Add small amounts of your milk of choice if the bananas aren’t blending. You can also eat this ice cream in its soft-serve form or scoop it into a container and freeze it for an additional 30 minutes for a firmer banana ice cream.
Banana Pancakes
Yields 1 serving (4-5 thin pancakes)
Ingredients: 1 ripe and large banana, 2 eggs, nonstick spray
You will need: Fork, skillet, spatula, stovetop
Mash a ripe banana in a bowl until all lumps are gone
Mix in two eggs with the mashed banana
Heat a skillet to medium heat and spray with nonstick spray
Scoop approximately ¼ of the batter on the skillet
Cook until the edges of the pancake look dry
Flip the pancake and cook the other side briefly
Repeat this process with the remaining batter
Suggested toppings: mini chocolate chips, strawberries, maple syrup, almond butter
Green Banana Smoothie
Yields 1 serving
Ingredients: 1 banana, 1 cup almond milk, ½ cup frozen mango, a handful of spinach
You will need: Blender
Add all your ingredients into the blender and blend
Serve chilled
Banana Muffins
Yields 12 servings
Ingredients: 2 ripe bananas, 2 eggs, 1 cup whole wheat flour, ¼ cup peanut butter, 1 ½ tsp baking powder, 3 tbsp honey, ¼ tsp salt, ¼ cup water, 1 tsp vanilla extract
You will need: Food processor, baking cups, muffin tin, oven
Preheat the oven to 400 degrees Fahrenheit
Spray a muffin tin with cooking spray
In a food processor add in all the ingredients and blend until smooth
Pour the muffin mixture into muffin tins lined with baking cups
Bake the muffins for 15 to 17 minutes
Insert a toothpick into the muffins to see if they are done
If the toothpick doesn’t come out clean continue baking in 3-minute intervals
Banana Chips
Yields: 2 servings
Ingredients: 2 bananas, 1 tbsp lemon juice, 4 tbsp water, salt
You will need: Small bowl, basting brush, parchment paper, oven
Preheat oven to 250 degrees Fahrenheit
Line a baking tray with parchment paper
In a small bowl, combine 1 tablespoon of lemon juice with 4 tablespoons of water
Slice the bananas into very thin slices
Brush the lemon juice and water mixture over the slices using a basting brush
Sprinkle salt on top.
Bake for two hours at 250 degrees Fahrenheit. Flip the slices halfway through baking.
Allow the chips to cool for a few hours for a crisper texture.
